Dice the liver into small cubes and sauté.
Sauté the rice and add spices, currants, and liver to prepare a semi-cooked pilaf.
Soften the lamb caul fat in warm water and cut into pieces.
Place the pilaf inside each piece and wrap into bundles.
Arrange on a baking tray lined with parchment paper.
Bake in a preheated oven at 200°C until golden brown.
Note. Soaking the caul fat in warm vinegary water helps remove its odor.
It is the thin, lacy membrane of fat that surrounds the internal organs of a lamb.
It goes perfectly with tzatziki or a fresh green salad.
