A traditional bread from Kastamonu that stays fresh for days thanks to boiled potatoes, crispy outside and fluffy inside.

Calories are an editor’s estimate per serving, not a lab measurement.
Mash the boiled potatoes while still hot and let them cool down.
In a deep mixing bowl, combine flour, yeast, sugar, and salt.
Make a well in the center, add mashed potatoes, warm water, and olive oil, then knead into a soft dough.
Cover the dough and let it rise in a warm place for 1 hour.
Shape the risen dough into a round loaf and let it rest on a floured tray for 30 minutes.
Bake in a preheated oven at 200°C (400°F) for about 45 minutes until golden brown.
Note. Smooth potatoes improve the bread's texture; make sure they are thoroughly mashed before adding them to the dough.
Thanks to the potatoes inside, this bread stays fresh for 4-5 days in an airtight container.
Standard wheat flour works well, but you can also mix it with whole wheat flour for a rustic taste.
