Calories are an editor’s estimate per serving, not a lab measurement.

Method

  1. 1

Melt the butter in a wide pot and add the vegetable oil.

  2. 2

Add flour and starch, and roast on low heat for about 15 minutes until slightly golden.

  3. 3

In a separate bowl, mix milk, sugar, and vanilla until the sugar dissolves.

  4. 4

Slowly pour the milk mixture over the roasted flour while whisking rapidly to prevent lumps.

  5. 5

Cook on low heat, stirring constantly, until it thickens and bubbles.

  6. 6

Let the bottom caramelize slightly by keeping it on low heat for 2-3 more minutes before removing from stove.

  7. 7

Once cooled slightly, invert onto a serving plate and serve.

Note. Allow the bottom to catch a slight caramelized flavor at the end; this is the ultimate secret of kazan helvası.
