A delicious pastry made by scrunching up phyllo sheets in a baking tray, generously filled with cheese and crispy on the outside.

Calories are an editor’s estimate per serving, not a lab measurement.
Whisk milk, yogurt, oil, 1.5 eggs, and salt in a bowl for the sauce.
Mash the feta cheese and mix with chopped parsley to prepare the filling.
Lay the first phyllo sheet on the counter and spread the sauce evenly over it.
Sprinkle the cheese mixture over the sheet and scrunch it up from the edges to create folds.
Place the scrunched phyllo in a greased baking tray starting from the center.
Repeat for the remaining sheets, arranging them in a spiral shape in the tray.
Pour remaining sauce, brush with egg yolk, add butter pieces, and bake at 190°C (375°F) until golden.
Note. Do not pack the scrunched phyllo too tightly so the sauce can thoroughly soak in.
Feta or curd cheese is traditional, but any crumbly, non-melting cheese works well.
Yes, you can freeze it unbaked after assembling and bake it straight from frozen when needed.
