Soak the sun-dried apricots in warm water for 10 minutes to soften, then drain.
Make a slit on one side of each apricot to form a pocket and remove the pits.
Stuff the pockets with crushed walnuts and gently press them closed.
Melt butter in a wide pan, arrange the stuffed apricots, and sauté lightly.
Add sugar, water, and cinnamon, then cover the pan.
Simmer on low heat for about 10-15 minutes until they absorb the syrup.
Serve warm, garnished with clotted cream.
Note. Be careful not to stuff the apricots too tightly, or they might break apart.
For an authentic traditional taste, sun-dried (organic dark) apricots must be used.
If clotted cream is unavailable, you can serve it with strained yogurt or ice cream.
