Combine flour, yeast, salt, and warm water in a bowl, knead into a soft dough, and let it rise.
Chop the onion, sauté in vegetable oil, then add mashed boiled potatoes, spices, and salt.
Divide the risen dough into walnut-sized pieces and roll each into a small disc.
Stack the rolled dough discs, brushing melted butter between each layer.
Lay half of the buttered dough layers in a baking tray, then spread the potato filling evenly over them.
Cover the filling with the remaining dough layers, brushing butter between them, and slice into portions.
Bake in a preheated oven at 190°C (375°F) for about 40 minutes until golden brown.
Note. Mixing a little vegetable oil into the melted butter helps create an even crispier, flaky texture between the layers.
Traditional recipes use yeast for a softer texture, but it can also be made without yeast by resting the dough.
Store leftover kömbe in the refrigerator and gently reheat in an oven or pan before serving.
