Servings and cooking time scaler
Ingredients scale in proportion to servings; cooking time does not. A bigger pot takes longer to boil, and a thicker tray needs roughly a third more oven time.
How to scale a recipe to a different number of servings
- Find the factor. Divide the servings you need by the recipe's servings. Going from 4 to 6 is a factor of 1.5.
- Multiply the ingredients. Multiply each ingredient. Add salt and spices at three quarters of the factor first, then taste.
- Pick the pan. If the pot or tray stays the same, the layer gets thicker; pick a wider base to keep the same depth.
- Adjust the time. Stovetop time stays the same but the boil comes later. In the oven, a thicker layer needs about a third more time at the same heat.
