Boil sugar and water to make the syrup and let it cool completely.
Mix warm water, milk, yeast, and sugar in a bowl and let sit for 5 minutes until active.
Add flour and salt to get a smooth batter slightly thicker than crepe batter.
Heat a pan and pour batter with a ladle, cooking only the bottom side until bubbles form; the top must remain raw.
Place walnut and cinnamon mixture in the center of each cooked dough piece and seal tightly into a half-moon shape.
Fry the prepared kadayifs in hot oil until golden brown.
Drop the hot fried kadayifs into cold syrup for a few minutes, then transfer to a serving plate.
Note. It is crucial that the top side of the dough remains uncooked so the edges stick together properly; never cook both sides.
The pastry should be hot when fried, and the syrup must be completely cold.
Resting the dough for 15-20 minutes is enough to get the right consistency; long fermentation is not required.
