Add water or broth to a deep saucepan and bring to a boil.
Add the boiled chickpeas and homemade noodles to the boiling water, and cook until the noodles are tender.
In a separate bowl, whisk together the strained yogurt, egg yolk, and flour until smooth.
Take a ladle of boiling broth from the soup and mix it into the yogurt dressing to temper it.
Slowly pour the tempered yogurt mixture into the pot while continuously stirring the soup.
Once the soup begins to simmer, add salt, cook on low heat for 5 more minutes, and remove from heat.
Melt butter in a small pan, add mint and chili flakes, sizzle lightly, and drizzle over the soup before serving.
Note. To prevent the yogurt from curdling, temper the mixture with hot broth and keep stirring until it reaches a simmer, adding salt at the very end.
Dutmac soup has deep roots in Central Asian tradition and is frequently prepared in Central Anatolian cuisines like Sivas, Kayseri, and Konya.
