Method

  1. 1

Blanch chard leaves in boiling water for 1 minute, then transfer to cold water.

  2. 2

Sauté onions in olive oil in a wide pan until translucent.

  3. 3

Add rice, diced artichokes, prunes, mint, allspice, and salt, and sauté for 2 minutes.

  4. 4

Place filling on each chard leaf and roll tightly like small parcels.

  5. 5

Arrange rolls in a pot, pour lemon juice, a little olive oil, and hot water over them.

  6. 6

Simmer on low heat for about 30 minutes until rice is cooked, then let rest at room temperature.

Note. The dried plums add a subtle caramelized sweetness; you can balance it by placing lemon slices at the bottom of the cooking pot.

Questions

Can I use collard greens instead of chard?

Chard provides the best tender texture for this specific filling, but young collard leaves can work as an alternative.

Should it be served warm or cold?

Like most Turkish olive oil dishes, it tastes best when served at room temperature or chilled.
