Ingredients
- 2 bunches fresh chard leaves
- 2 artichoke hearts (diced)
- 1 cup baldo rice
- 1 large onion (finely chopped)
- 1/2 cup extra virgin olive oil
- Juice and zest of 1 orange
- 1 bunch fresh dill (chopped)
- 1 tsp granulated sugar and salt
- 1.5 cups warm water
Method
- Blanch chard leaves in boiling water for 1 minute, transfer to cold water, and remove thick stems.
- Sauté onion in olive oil until translucent, add rinsed rice and diced artichokes, and sauté for a few minutes.
- Add orange zest, sugar, salt, dill, and 1/2 cup water; cook on low heat until rice absorbs the liquid.
- Place filling onto the center of each chard leaf and roll tightly.
- Arrange the rolls in a pot, drizzle with orange juice, remaining olive oil, and 1 cup water.
- Cover with a small plate, simmer on low heat for about 35 minutes, rest at room temperature before serving.
Since chard leaves are very tender, keep the blanching time short to prevent tearing.
