Tips and measures

Ingredients

  • 2 liters fresh raw water buffalo milk
  • Wide and shallow copper or steel pot
  • Clean cheesecloth or fabric

Method

  1. Strain the buffalo milk into a wide and shallow pot.
  2. Heat the milk over medium heat until it reaches a boiling point, being careful not to overflow.
  3. Reduce the heat to the lowest level once it starts boiling and do not stir so as not to disturb the foam on the surface.
  4. Simmer the milk gently on low heat like this for about 1-2 hours.
  5. Turn off the stove, cover the pot with a clean cheesecloth and let it rest at room temperature for 5-6 hours.
  6. Transfer the rested pot to the refrigerator and chill for at least 12 hours (preferably 24 hours).
  7. Carefully slice and remove the thick layer of cream formed on top of the chilled milk using a knife.

To make the cream thicker and tastier, you must use fresh raw buffalo milk with a high fat content.
