In a bowl combine flour, salt, eggs and water; knead into a smooth dough and let rest for 20 minutes.
Roll the dough thin and cut into 4 cm squares. Place a teaspoon of cheese filling on each, fold into triangles and seal the edges tightly.
Bring a large pot of salted water to boil, add the manti and cook 8‑10 minutes until they float to the surface.
Whisk the yogurt, then stir in dried mint and melted butter until smooth.
Drain the cooked manti, arrange on a serving plate and drizzle with the yogurt sauce.
Optionally garnish with extra melted butter and a pinch of paprika before serving.
Note. Press the dumpling edges firmly to prevent the filling from leaking during cooking.
Adding a tablespoon of yogurt to the dough improves its elasticity.
Stir in a teaspoon of flour and simmer briefly until it reaches the desired consistency.
