Ingredients
- 1 whole boneless lamb shoulder (approx. 1.5 kg)
- 1 cup raw peeled almonds
- 1 head of garlic (cloves separated)
- 3 tablespoons butter
- 1 teaspoon tomato paste
- 1 teaspoon pepper paste
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 cups hot water
Method
- Lay the lamb shoulder on the counter and trim excess fat.
- Make deep pockets in various parts of the meat with a sharp knife.
- Insert a garlic clove and a few raw almonds into each pocket.
- In a separate bowl, mix butter, pastes, salt, and black pepper to create a sauce.
- Massage the prepared sauce all over the meat thoroughly.
- Place the meat in an oven bag, tie it, poke a few holes, and bake in a preheated 180°C oven for about 2 hours.
- Open the bag to brown the top of the meat, then slice and serve.
For an even softer texture, let the meat rest in the fridge for 3-4 hours after saucing.
FAQ

Boneless lamb shoulder is preferred in the traditional recipe.
Do the almonds burn while cooking?
Since the almonds are stuffed inside the meat and cooked in an oven bag, they do not burn; instead, they soften and add flavor.
