Ingredients
- 2 kg bone-in kid goat meat (shoulder and ribs)
- 4 tomatoes (diced)
- 6 green bell peppers
- 8-10 cloves of garlic
- 3 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon thyme
- 1 cup hot water
Method
- Wash and dry the kid goat pieces, then arrange them in a baking tray or clay casserole.
- Sprinkle salt, black pepper, and thyme over the meat, and dot with small pieces of room-temperature butter.
- Place whole garlic cloves in between, and scatter diced tomatoes and green peppers around the meat.
- Carefully pour the hot water along the edge of the tray.
- Cover the tray tightly first with wet parchment paper, then tightly with aluminum foil so no air escapes.
- Bake in a preheated 200°C oven for about 1 hour, then lower the heat to 170°C and bake for another hour until tender.
- Remove the cover at the end and bake for 10 more minutes to brown, then serve hot.
Keep spices minimal to let the natural meat flavor shine; using a clay pot enhances the taste.
