Tips and measures

Ingredients

  • 4 cups all-purpose flour
  • 1 packet instant yeast
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1.5 cups warm water
  • 3 tablespoons olive oil
  • 1 cup pitted black and green olives (chopped)
  • 1 teaspoon dried thyme

Method

  1. Sift the flour into a deep mixing bowl, make a well in the center and add yeast, salt, and sugar.
  2. Gradually add warm water and olive oil, kneading until you get a soft dough.
  3. Add the chopped olives and thyme to the dough, kneading for a few more minutes until evenly distributed.
  4. Cover the dough with a damp cloth and let it rise at room temperature for 45 minutes.
  5. Shape the risen dough into a loaf and let it proof on a baking tray lined with parchment paper for another 20 minutes.
  6. Bake in a preheated oven at 200°C (400°F) for about 35 minutes until golden brown.
  7. Slice and serve once it cools down to room temperature.

If your olives are very salty, soak them in water briefly before adding them to the dough to reduce the saltiness.
