Tips and measures

Ingredients

  • 4 large red bell peppers
  • 150 grams fresh curd cheese or lor cheese
  • 2 tablespoons extra virgin olive oil (for filling)
  • Half bunch finely chopped parsley
  • 2 cloves crushed garlic
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried thyme
  • Half teaspoon salt
  • Half tea glass extra virgin olive oil for drizzling

Method

  1. Wash and dry the red bell peppers and place them on a baking sheet.
  2. Roast in a preheated oven at 200°C for about 25 minutes until soft and slightly charred.
  3. Place the roasted peppers in a bag while hot to steam, peel them after 10 minutes, and remove the seeds.
  4. In a bowl, mix the curd cheese, 2 tablespoons olive oil, parsley, garlic, red pepper flakes, thyme, and salt.
  5. Slice the peppers open lengthwise without cutting all the way through, and stuff them with the cheese mixture.
  6. Transfer to a serving plate, drizzle with the remaining extra virgin olive oil, and serve garnished with fresh herbs.

Steaming the roasted peppers in a bag makes peeling their skins much easier.
